I love a snack food that I can have for dessert after lunch and dinner. I won’t stop eating until I have something that cuts it.
Here’s the latest creation to kill the urge.
Superfood Rocky Road
Melt together over a double boiler or Thermomix:
– 120g cacao butter
– 2 tbspn raw cacao powder
– 1/2 tbspn maca powder
– 1.5 tbspn rice syrup
In a food processor (or Thermomix) gentle pulse together the following:
– 1/3 cup Goji berries
– 2/3 cup dried apricots
– 1/3 cup pepitas or sunflower seeds
– 2/3 cup flakes coconut
– 1 cup activated buckwheat*
Don’t let it grind too small. Should be small chunks of pieces to ensure a nice crunch.
Then stir throw the dry mix with the melted chocolate and place onto a non-stick tray into fridge or on baking paper. When chocolate is hard just smash it up into chunks.
You can also use other things you may find in your pantry such as:
– dehydrated strawberries
– dried cherries
– dried cranberries
– sultanas or raisins
– cashews or macadamia’s
The list is endless really! All that I had on hand is in the recipe above but you can style it to your fancy.
