A wonderful lunch option, good snack slice or power packed dinner when served with extra veggies. It’s high in protein, simple to make and very satisfying.
Vegetarian Sweet Potato and Feta Slice
– 2 cups puréed sweet potato
– 1.5 cups almond meal
– 1.5 cups activated buckwheat
– 2/3 cup walnuts
– 1.5 cups baby English spinach
– 100g feta or goats cheese
Combine with hands, processor, beloved Thermomix or blender. I then put the mix onto a silicon mat and shaped with a wet spatula. Place it into 180 degree preheated oven for about 30-40 minutes. Allow to cool a little before slicing. It will be moist but will hold together when cooked.
I served it with homemade sauerkraut and whole egg mayonnaise for a light lunch.
