Here it is!!!
– 2 chicken breast chopped
– 2 cups of favourite chopped vege
– 1 brown onion
– 2-3 garlic gloves
– 1 tin tomatoes
– 1/2 tin of water
– 1/2 cup raw cashews
– 2 tspn salt
– 1 tspn ground ginger or 2cm fresh
– 1/2 tspn paprika (smoked is fine)
– 2 tbspns red curry paste (Indian styled)
Chop onion and garlic and sauté until soft and transparent. Toss garlic and onion with all other ingredients except chicken and Vege in food processor, faithful Thermomix or blender and whazz it up till combined and smooth or mostly smooth.
Throw the chicken and Vege in with the sauce into a heavy based pot, Thermomix or slow cooker.
Thermomix – 20minutes, reverse, speed 2
Stove top – bring up to bubble then turn to simmer for 25-30minutes
Slow cooker – blast on high for 2-3 hours…
